Instructions

  1. Preheat and prepare pan: Preheat your oven to 350°F (175°C). Line an 8 x 8 inch baking pan with aluminum foil, leaving an overhang on the sides to easily lift the blondies out later. Spray the foil with cooking spray and set aside.
  2. Make the batter: In a medium bowl, combine the melted butter, light brown sugar, and salt. Mix well. Add the egg, vanilla extract, and cinnamon, stirring until completely incorporated. Fold in the mashed banana until evenly mixed.
  3. Add flour and bake: Gradually add the all-purpose flour to the mixture, stirring until the batter is smooth and fully combined. Pour the batter into the prepared pan, smooth the top with a spatula, and bake for 25-30 minutes. The blondies are done when the center is set and a toothpick inserted comes out mostly clean. Remove from the oven and allow to cool completely to room temperature.
  4. Prepare the frosting: In a medium saucepan, melt the butter over medium heat. Continue cooking, stirring constantly, until the butter turns a rich amber color, careful not to burn it. Add the light brown sugar, milk, and a dash of salt, stirring and bringing the mixture to a boil. Remove from heat and let cool for 10-15 minutes.
  5. Finish frosting and serve: Whisk vanilla extract and powdered sugar into the slightly cooled frosting mixture until smooth. Spread the frosting evenly over the cooled blondies. Allow the frosting to set before slicing and serving.
