Ingredients

Scale

Blue Cheese Sauce

  • 2 tbsp (40 grams) butter
  • 1 tbsp garlic (chunky minced or 23 fresh cloves finely chopped)
  • 1 tbsp onion flakes
  • 2 tsp dried chives
  • 1/4 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp white wine vinegar
  • 250 ml (1 cup) heavy cream
  • 150 grams (5 oz) blue cheese
  • 1/2 cup mozzarella cheese

Pasta

  • 500 grams (16 oz) macaroni pasta

For Garnish

  • Parmesan cheese, freshly grated
  • Black pepper, to taste
  • Basil leaves, fresh

Instructions

  1. Prepare the Blue Cheese Sauce: Place a large frying pan on the stove over high heat and melt the butter. Add the garlic, onion flakes, dried chives, salt, and black pepper, stirring to combine the flavors. Pour in the white wine vinegar, followed by the heavy cream. Then add the blue cheese and mozzarella, reduce the heat, and stir continuously until the cheeses melt into a smooth sauce.
  2. Cook the Macaroni: In a medium saucepan, bring salted water to a boil. Add the macaroni and cook according to packet instructions until al dente, meaning the pasta is tender but still slightly firm to the bite. Drain the macaroni using a colander, discarding the water afterward.
  3. Combine Pasta and Sauce: Add the drained macaroni into the pan with the blue cheese sauce. Stir well with a wooden spoon to ensure the pasta is evenly coated. Turn the heat up slightly and allow everything to heat through thoroughly.
  4. Serve and Garnish: Plate the mac and cheese and generously sprinkle freshly grated parmesan cheese on top, add a dash of black pepper, and garnish with fresh basil leaves to enhance the dish’s aroma and presentation. Serve immediately with bowls, forks, and spoons.

Notes

  • For a sharper flavor, use good quality blue cheese and allow it to soften at room temperature before adding.
  • Use fresh garlic cloves if possible for a more vibrant garlic flavor instead of pre-minced garlic.
  • The white wine vinegar adds acidity to balance the richness of the cheeses—do not omit.
  • Ensure to not overcook the macaroni to preserve the slightly chewy texture that pairs well with the creamy sauce.
  • You can substitute mozzarella with other mild melting cheeses if preferred.
