Buttercream
- 720 grams powdered sugar (6 cups)
- 170 grams unsalted butter, softened (¾ cup)
- 54 grams blueberry flavor paste (3 tbsp)
- 45 grams whole milk (3 tbsp)
- 1 gram salt (½ teaspoon)
Chocolate Coating
- Dark or milk chocolate, melted (quantity as needed for dipping)
- Prepare Pan: Line an 8 x 6 quarter sheet pan with parchment paper to ensure easy removal and cleanup.
- Beat Butter: In a large mixing bowl, beat the unsalted butter until it becomes smooth and creamy, forming the base of your buttercream.
- Add Powdered Sugar: Gradually incorporate the powdered sugar, mixing thoroughly after each addition to achieve a consistent texture.
- Mix Flavor and Salt: Stir in the blueberry flavor paste and salt evenly to distribute the taste and balance the sweetness.
- Incorporate Milk: Add 3 tablespoons of whole milk and continue beating until the buttercream is smooth, creamy, and spreadable.
- Chill Buttercream: Spread the prepared buttercream mixture evenly into the lined sheet pan. Chill in the refrigerator for 15–20 minutes to firm up for easier cutting.
- Cut Squares: Once chilled, cut the buttercream into 1″ x 1″ squares. Place these on a parchment-lined tray.
- Dry Buttercream: Allow the cut buttercream squares to dry at room temperature on the tray for 12 to 24 hours, which helps them hold their shape when dipped.
- Dip in Chocolate: Dip each buttercream square into melted chocolate, fully coating them. Place back on parchment to set until the chocolate is firm.
Notes
- Ensure the butter is softened to room temperature for best mixing results.
- Use high-quality blueberry flavor paste to get intense and authentic flavor.
- Drying the buttercream squares before dipping helps prevent melting and ensures a smooth chocolate coating.
- Use tempered chocolate or add a small amount of vegetable oil to melted chocolate for a shiny finish.
- Store finished chocolates in a cool, dry place or refrigerated to maintain quality.
