Ingredients

Scale

Buttercream

  • 720 grams powdered sugar (6 cups)
  • 170 grams unsalted butter, softened (¾ cup)
  • 54 grams blueberry flavor paste (3 tbsp)
  • 45 grams whole milk (3 tbsp)
  • 1 gram salt (½ teaspoon)

Chocolate Coating

  • Dark or milk chocolate, melted (quantity as needed for dipping)

Instructions

  1. Prepare Pan: Line an 8 x 6 quarter sheet pan with parchment paper to ensure easy removal and cleanup.
  2. Beat Butter: In a large mixing bowl, beat the unsalted butter until it becomes smooth and creamy, forming the base of your buttercream.
  3. Add Powdered Sugar: Gradually incorporate the powdered sugar, mixing thoroughly after each addition to achieve a consistent texture.
  4. Mix Flavor and Salt: Stir in the blueberry flavor paste and salt evenly to distribute the taste and balance the sweetness.
  5. Incorporate Milk: Add 3 tablespoons of whole milk and continue beating until the buttercream is smooth, creamy, and spreadable.
  6. Chill Buttercream: Spread the prepared buttercream mixture evenly into the lined sheet pan. Chill in the refrigerator for 15–20 minutes to firm up for easier cutting.
  7. Cut Squares: Once chilled, cut the buttercream into 1″ x 1″ squares. Place these on a parchment-lined tray.
  8. Dry Buttercream: Allow the cut buttercream squares to dry at room temperature on the tray for 12 to 24 hours, which helps them hold their shape when dipped.
  9. Dip in Chocolate: Dip each buttercream square into melted chocolate, fully coating them. Place back on parchment to set until the chocolate is firm.

Notes

  • Ensure the butter is softened to room temperature for best mixing results.
  • Use high-quality blueberry flavor paste to get intense and authentic flavor.
  • Drying the buttercream squares before dipping helps prevent melting and ensures a smooth chocolate coating.
  • Use tempered chocolate or add a small amount of vegetable oil to melted chocolate for a shiny finish.
  • Store finished chocolates in a cool, dry place or refrigerated to maintain quality.
