Instructions

  1. Preheat the Oven: Set your oven to 350℉ (175℃) to prepare for baking both the biscuit crust and the assembled casserole.
  2. Cook the Ground Beef: Heat a skillet over medium-high heat. Add the lean ground beef and break it apart with a spoon. Cook until no longer pink, stirring occasionally. Drain off any excess fat. This step creates the flavorful meat base for the casserole.
  3. Prepare the Biscuit Dough: While the meat cooks, combine biscuit mix and water in a mixing bowl. Stir until well mixed, using your hands if possible for better incorporation. Spray a casserole dish with cooking spray and press the dough evenly into the dish, spreading it to the edges. Bake the biscuit crust in the preheated oven for 5-8 minutes until set and lightly golden. Remove and keep the oven on.

  7. Add Salsa and Cheese: Spoon the mild salsa over the sour cream layer in small dollops without spreading. Sprinkle the remaining ¾ cup of shredded cheese evenly over the top to add flavor and a golden cheesy crust when baked.
  8. Bake the Casserole: Return the casserole to the oven uncovered. Bake for 30 minutes or until the casserole is hot throughout and bubbly on top. Let it cool slightly before serving.
