Ingredients

Scale

Chicken and Seasoning

  • 2 boneless skinless chicken breasts
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Sandwich Components

  • 1 avocado, sliced
  • 4 slices cheese (Swiss, cheddar, or provolone)
  • 4 slices bread (sourdough, ciabatta, or your choice)
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 small red onion, thinly sliced
  • 1 tomato, sliced
  • Butter or olive oil for grilling the sandwiches

Instructions

  1. Season Chicken: Season the chicken breasts evenly with salt and pepper on both sides to taste.
  2. Heat Skillet: Place a skillet over medium-high heat and add the olive oil, allowing it to warm.
  3. Cook Chicken: Add the chicken breasts to the hot skillet and cook for 6-7 minutes on each side until the chicken is fully cooked through and no longer pink in the center. Remove from skillet and let rest a few minutes before slicing thinly.
  4. Prepare Ingredients: Slice the avocado and set aside along with the cheese slices for assembling the sandwich.
  5. Spread Condiments: Spread a thin layer of mayonnaise and Dijon mustard on each slice of bread for flavor and moisture.
  6. Assemble Sandwich: On two slices of prepared bread, layer sliced chicken, avocado, cheese, red onion, and tomato slices evenly.
  7. Top Sandwiches: Place the remaining bread slices on top of each sandwich, mayo side down to seal.
  8. Heat Pan for Grilling: Warm a skillet or grill pan over medium heat and add a small amount of butter or olive oil to prevent sticking.
  9. Grill Sandwiches: Place the sandwiches in the skillet and cook for about 3-4 minutes per side until the bread is golden brown and the cheese has melted. Gently press with a spatula to help the cheese melt evenly.
  10. Serve: Remove the sandwiches from the skillet and allow to cool slightly before slicing in half and serving warm.

Notes

  • Use your preferred type of cheese and bread for variations in flavor.
  • Make sure chicken is cooked to an internal temperature of 165°F (74°C) for safety.
  • You can add other vegetables or greens like spinach or arugula for extra nutrition.
  • If desired, swap mayonnaise for a lighter spread or yogurt-based sauce to reduce calories.
  • Press sandwiches gently during grilling to ensure even melting of the cheese.
