Ingredients

Scale

Filling

  • 10 ounces cooked, shredded chicken breast (about 2 cups)
  • 4 ounces cream cheese, softened
  • 1 tablespoon salted butter, softened
  • 1/2 tablespoon dried chives
  • 1/2 tablespoon dried minced onion
  • Salt and pepper to taste

Dough and Coating

  • 1 can (8 ounces) refrigerated Pillsbury crescent roll dough
  • 1/4 cup salted butter, melted
  • 1/2 cup Italian breadcrumbs

Gravy

  • 1 can (10 ounces) cream of chicken soup
  • 1 packet (1 ounce) chicken gravy mix
  • 3/4 cup water

Instructions

  1. Preheat Oven and Prepare Baking Sheet: Preheat your oven to 350 degrees F. Lightly grease a baking sheet with non-stick spray and set it aside to be ready for baking the pillows.
  2. Make the Filling: In a bowl, mix the softened cream cheese and 1 tablespoon of softened butter together until smooth. Add the shredded chicken, dried chives, dried minced onion, and season with salt and pepper to taste. Stir until all ingredients are evenly combined.
  3. Prepare Crescent Dough: Unroll the crescent dough and press two triangles together to form one rectangle. Make sure to seal the perforations well to prevent the filling from leaking out. You will end up with 4 rectangles.
  4. Assemble Chicken Pillows: Divide the chicken filling evenly among the 4 dough rectangles, placing the mixture in the center of each. Fold each corner of the rectangle over the filling so that it is completely covered. Press the edges together to seal and shape each into a ball. Repeat for all rectangles.
  5. Coat the Pillows: Dip each formed chicken pillow into the melted butter, then roll it in Italian breadcrumbs to coat thoroughly. Shake off any excess breadcrumbs. Place the coated pillows on the greased baking sheet, spacing them evenly.
  6. Bake: Bake the chicken pillows in the preheated oven for 22 to 25 minutes, or until they turn golden brown and crisp on the outside.
  7. Prepare Gravy: While the pillows are baking, combine the cream of chicken soup, chicken gravy mix, and water in a small saucepan. Bring to a boil over medium heat, then reduce heat to low and let simmer until the pillows are done.
  8. Serve: Remove the chicken pillows from the oven, pour the warm chicken gravy over them, and serve immediately. Enjoy your delicious Chicken Pillows!

Notes

  • You can substitute fresh herbs like chives and onion for dried if you prefer, adjusting quantities accordingly.
  • Make sure to seal the crescent dough well to avoid any filling leakage during baking.
  • For a crispier coating, double dip the pillows in butter and breadcrumbs before baking.
  • This recipe works well with leftover cooked chicken to reduce prep time.
  • Leftover chicken pillows can be stored in an airtight container in the refrigerator for up to 3 days and reheated in the oven.
