Seafood Stuffing
- 120 g lump crab meat
- 120 g cooked shrimp, chopped
- 60 g cream cheese, softened
- 1 tablespoon mayonnaise
- 1 tablespoon fresh parsley, chopped
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1 teaspoon Dijon mustard
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 30 g breadcrumbs
Salmon Fillets
- 4 skinless salmon fillets (170 g each)
- 1/2 teaspoon salt (for seasoning)
- 1/4 teaspoon black pepper (for seasoning)
- 1 tablespoon olive oil
- Lemon wedges, for serving
- Prepare Seafood Filling: In a medium bowl, combine chopped shrimp, lump crab meat, softened cream cheese, breadcrumbs, mayonnaise, Dijon mustard, garlic powder, paprika, chopped parsley, salt, and black pepper. Mix thoroughly until the ingredients are well incorporated and form a homogeneous mixture. Set aside.
- Shape and Season Salmon Fillets: Preheat your oven to 190°C (375°F). Using a sharp knife, carefully slice a pocket into the center of each salmon fillet without cutting all the way through. Season both sides of each fillet and the interior of the pocket with salt and pepper.
- Stuff and Secure Salmon: Evenly fill each salmon pocket with the prepared seafood stuffing. If needed, use toothpicks to secure the edges of the pocket and keep the filling contained during cooking.
- Sear Stuffed Salmon: Heat olive oil in an oven-safe skillet over medium-high heat. Place the stuffed salmon fillets into the skillet and sear for 2 to 3 minutes on each side until they develop a light golden-brown crust.
- Bake to Finish: Transfer the skillet with the seared salmon fillets to the preheated oven. Bake for 12 to 15 minutes, or until the salmon turns opaque throughout and the seafood filling is warmed completely.
- Plate and Garnish: Remove the skillet from the oven carefully. Serve the stuffed salmon fillets plated with fresh lemon wedges on the side to squeeze over the top for added bright flavor.
Notes
- Make sure not to cut through the salmon completely when creating the pocket.
- Using an oven-safe skillet allows for easy searing and transferring to the oven without changing cookware.
- If you don’t have fresh parsley, dried can be used but reduce the quantity as dried herbs are more concentrated.
- For a gluten-free option, substitute breadcrumbs with gluten-free breadcrumbs or crushed nuts.
- To avoid the filling spilling out during searing, securing with toothpicks is recommended.
- Rest the salmon a few minutes after baking before serving for juices to redistribute.
