Shrimp Marinade
- 1 pound peeled, deveined shrimp – thawed and patted dry
- 1 tablespoon olive oil
- 4 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon red chili flakes
Shrimp Cooking
- 2 tablespoons olive oil
- 1/4 cup honey
- 1 lime, juiced
- 2 tablespoons parsley, chopped – optional
- Marinate the shrimp: In a medium-sized bowl, combine the shrimp with 1 tablespoon of olive oil, minced garlic, salt, and red chili flakes. Toss everything together to coat the shrimp evenly and refrigerate for 5 minutes to allow the flavors to penetrate.
- Cook the shrimp: Heat a cast-iron skillet over high heat and add 2 tablespoons of olive oil. When the oil is hot, add the marinated shrimp and cook for 2 minutes without moving, allowing them to sear on one side.
- Add honey and lime juice: Flip the shrimp, then pour in the honey and lime juice. Toss the shrimp gently to coat them in the sauce and continue cooking for another 2 to 3 minutes, or until the shrimp are opaque, fully cooked, and the sauce has thickened nicely.
