Ingredients

Scale

Ground Beef Mixture

  • 1 pound ground beef
  • 1 medium yellow onion, chopped
  • 2 garlic cloves, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1/2 teaspoon paprika
  • 1 tablespoon olive oil
  • 1/2 cup beef broth

Vegetables and Cheese

  • 4 medium russet potatoes, peeled and diced
  • 1 cup shredded cheddar cheese, divided
  • 1 cup sour cream

Instructions

  1. Prepare Oven: Preheat your oven to 375°F (190°C) to get it ready for baking the casserole.
  2. Prepare Vegetables: Peel and dice the russet potatoes into small, even cubes. Chop the yellow onion and mince the garlic cloves for sautéing.
  3. Sauté Aromatics: Heat olive oil in a large skillet over medium heat. Add chopped onions and minced garlic, cooking until they become fragrant and softened, which brings out their flavors.
  4. Brown the Beef: Add the ground beef to the skillet. Season it with salt, black pepper, dried thyme, and paprika. Cook the beef while breaking it up with a spoon until it’s browned and cooked through.
  5. Simmer with Broth: Pour in the beef broth and stir to combine. Let the mixture simmer for a few minutes to meld the flavors before removing the skillet from heat.
  6. Combine with Potatoes: In a large mixing bowl, mix the diced potatoes with the beef mixture. Fold in the sour cream and half of the shredded cheddar cheese until everything is well incorporated.
  7. Layer in Baking Dish: Transfer this mixture into a baking dish and spread it out evenly. Sprinkle the remaining cheddar cheese evenly on top.
  8. Bake Covered: Cover the baking dish tightly with aluminum foil and bake in the preheated oven for 30 minutes to cook the potatoes through and meld flavors.
  9. Finish Baking Uncovered: Remove the foil and continue baking for another 10 to 15 minutes, until the cheese topping is melted, golden, and bubbling.
  10. Rest and Serve: Remove the casserole from the oven and allow it to rest for 10 minutes. This resting time helps set the casserole for better texture before serving.

Notes

  • For even cooking, dice potatoes into uniform small cubes.
  • You can substitute sour cream with Greek yogurt for a lighter version.
  • Use sharp cheddar for a more pronounced cheese flavor.
  • Covering the dish during the initial baking helps steam the potatoes thoroughly.
  • Letting the casserole rest is important to prevent it from falling apart when served.
