Apple Base
- 375 g cooking apples (such as Bramleys)
- 375 g eating apples (such as russets)
- 45 g butter
- 60 g caster sugar
- Grated rind of 1 lemon
Custard Topping
- 45 g butter
- 45 g plain flour (or cornflour)
- 500 ml whole milk
- 3 large egg yolks
- 1½ teaspoons vanilla bean paste or extract
Topping
- 60 g demerara sugar
- ½ teaspoon ground cinnamon
- Preheat and Prepare Apples: Preheat your oven to 180°C (350°F). Peel, core, and finely chop both the cooking and eating apples to prepare for the base layer.
- Cook the Apple Base: Melt 45 g of butter in a saucepan over medium heat. Add the chopped apples, caster sugar, and grated lemon rind, cooking for 5 to 7 minutes until the apples soften and release their juices. Transfer this mixture evenly into a baking dish.
- Make the Custard Mixture: In a separate saucepan, melt the remaining 45 g of butter over low heat. Stir in the flour to create a smooth roux. Gradually whisk the milk into the roux, continuing to cook until the mixture thickens slightly. Remove from heat, then vigorously whisk in the egg yolks and vanilla extract until fully combined.
- Assemble and Bake: Pour the custard mixture gently over the cooked apple base in the baking dish. Combine the demerara sugar with the ground cinnamon and sprinkle this evenly over the top. Place the dish in the oven and bake for about 20 minutes, or until the top turns a beautiful golden brown color.
