Mediterranean Pinwheels are a flavorful, easy-to-make appetizer featuring cream cheese blended with garlic, sun-dried tomatoes, fresh basil, and a medley of cheeses, rolled inside spinach or sun-dried tomato flavored tortillas along with spinach and more cheeses. These bite-sized, no-cook pinwheels are perfect for parties, snacks, or light lunches.

  • 8 ounces cream cheese

  • 6 ounces sun-dried tomatoes in oil, chopped (reserve oil)

Spinach and Cheese

  • 1012 ounces frozen spinach, cooked, water squeezed out, chopped
  • 1/4 cup grated parmesan cheese
  • 1/3 cup feta cheese crumbles

Fresh Herbs

  • 1 cup fresh basil leaves

Instructions

  1. Prepare the cream cheese mixture: In a food processor or blender bowl, combine 8 ounces cream cheese, 2 tablespoons garlic, 3-4 chopped sun-dried tomatoes, a pinch of salt and black pepper, 5-6 fresh basil leaves, and 2 tablespoons of reserved sun-dried tomato oil. Blend for 30 seconds, scrape down the sides, then blend an additional 10-15 seconds until completely smooth and combined. Set aside.
  2. Prepare tortillas: Lay out 6 large tortillas on a flat work surface. Flavored tortillas such as spinach or sun-dried tomato varieties work best, but plain flour or low-carb tortillas can also be used.
  3. Assemble the pinwheels: Spread a thick layer of the prepared cream cheese mixture evenly over each tortilla. Next, evenly distribute the chopped cooked spinach and chopped sun-dried tomatoes over the cream cheese. Sprinkle approximately 1 teaspoon of grated parmesan cheese and 1 to 2 teaspoons of feta cheese crumbles onto each tortilla. Down the center of each tortilla in a line, place fresh basil leaves from end to end.
  4. Roll tightly: Beginning from one outer edge parallel to the basil leaves, roll the tortilla tightly while gently squeezing to ensure the filling stays together. Repeat this rolling step for all tortillas.
  5. Slice into pinwheels: Using a serrated knife, carefully slice each rolled tortilla into approximately 1 inch thick pinwheels.
  6. Chill and serve: Arrange the pinwheels onto a plate, cover, and refrigerate until ready to serve. Enjoy these fresh and delicious Mediterranean pinwheels as an appetizer or snack.
