  • 1 cup chocolate chips (melted)

Instructions

  1. Mix peanut butter and maple syrup: In a large bowl, thoroughly combine 2/3 cup peanut butter with 2 tablespoons of maple syrup to make a smooth and sticky base mixture.
  2. Add rolled oats: Stir in 3/4 cup of old fashioned rolled oats into the peanut butter mixture until well incorporated, forming the oat base.
  3. Fill molds with base: Spoon approximately 2 tablespoons of the oat mixture into silicone molds or cupcake liners. Press down firmly with a spoon or cookie scoop to create an even and compact base layer.
  4. Prepare and add the peanut butter topping: Either add a simple dollop of 1 tablespoon peanut butter on top of each oat cup, or combine 1/2 cup peanut butter with 3 tablespoons protein powder and spread this mixture evenly over each base layer. Once topped, freeze the cups for 20 minutes to set.
  5. Melt the chocolate: While the cups freeze, melt 1 cup chocolate chips with about 2 teaspoons of oil in the microwave. Heat in 30-second intervals, stirring well after each to ensure smooth, lump-free melted chocolate.
  6. Add chocolate topping and freeze: Remove the oat cups from the freezer, spoon or drizzle the melted chocolate over each cup’s top layer, then return the cups to the freezer for an additional 20 minutes to harden the chocolate layer.
