  • 1 lb ground chicken (or turkey)
  • 2 tbsp garam masala (or curry powder)
  • 1/2 tsp turmeric
  • 1 1/2 tsp salt (plus more to taste)
  • 1 1/2 lbs potato (about 2 medium russets), diced
  • 1 cup water
  • 1 cup green peas (frozen or fresh)
  • 1/2 cup minced fresh cilantro

Crust

  • 1 sheet of puff pastry (thawed; 1/2 of a 17-oz package) or a single pie crust

Instructions

  1. Caramelize Onions: Heat the ghee or butter in a large stockpot over medium heat. Add the finely chopped onion and cook slowly until golden and caramelized, about 20 minutes, stirring occasionally to prevent burning.
  2. Add Aromatics: Mix in the finely chopped jalapeño and minced garlic. Cook for an additional 1 minute until fragrant.
  3. Cook Ground Meat: Add the ground chicken, garam masala, turmeric, and 1 1/2 teaspoons of salt. Stir frequently and cook until the chicken is no longer pink and well combined with the spices.
  4. Simmer Potatoes: Stir in the diced potatoes and water. Cover the pot and cook over medium heat, stirring occasionally, until the potatoes are tender, approximately 25 minutes.
  5. Finish Filling: Add the green peas and minced cilantro to the mixture. Taste and adjust seasoning as needed, usually adding more salt to suit your preference.
  6. Assemble Pie: Transfer the filling into a 2-quart (2 L) baking dish. Roll out the thawed puff pastry sheet and place it over the filling, trimming edges if necessary. Cut a few steam vents on top of the pastry to allow steam to escape during baking.
  7. Bake: Preheat your oven to 400°F (200°C). Bake the pie for about 25 minutes or until the puff pastry crust is golden brown and crisp.
