  • 2 tablespoon corn starch

  • 2 cup scallion, chopped (separate white and green parts)
  • 4 tablespoon oil (vegetable or peanut oil preferred)

Instructions

  1. Preparing the Chicken: In a bowl, mix the chicken thigh pieces with soy sauce, dark soy sauce, oyster sauce, black pepper powder, and corn starch thoroughly. Allow the mixture to marinate for 10 minutes so the flavors meld and the chicken tenderizes. While waiting, chop the scallions, separating the white parts from the green parts for staged cooking.
  2. Pan Frying Chicken: Heat 4 tablespoons of oil in a non-stick pan over medium heat. Add the marinated chicken pieces, spreading them out evenly. Cook, turning occasionally, until the chicken is fully cooked through and lightly browned, ensuring no raw spots remain.
  3. Cooking Scallions: Add the white parts of the chopped scallions to the pan with the chicken. Stir and cook until these pieces soften and release their aroma. For larger or bone-in chicken pieces, cover the pan with a lid to help cook the chicken thoroughly. Then add the green parts of the scallions and stir for an additional 10 to 20 seconds to lightly cook and retain their fresh crunch.
