Sweet Potato Rounds
- 2 medium sweet potatoes, peeled and sliced into ¼-inch rounds
- 1 tbsp olive oil
- Salt and pepper, to taste
Toppings
- 6 oz brie cheese, sliced
- ⅓ cup dried cranberries
- ¼ cup toasted pecans, roughly chopped or whole for garnish
- Optional: fresh rosemary or thyme for garnish
- Preheat and prepare baking sheet: Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper to prevent sticking and ensure easy cleanup.
- Prepare sweet potatoes: Wash, peel, and slice the sweet potatoes into ¼-inch thick rounds. Arrange the slices in a single layer on the prepared baking sheet to ensure even roasting.
- Season and roast sweet potatoes: Drizzle the sweet potato slices with olive oil and season with salt and pepper. Toss gently to coat each slice evenly. Roast in the oven for 20 to 25 minutes, flipping the slices halfway through, until they are tender and lightly caramelized.
- Add brie cheese and melt: Remove the baking sheet from the oven and top each sweet potato round with a slice of brie cheese. Return to the oven and bake for an additional 5 minutes, or until the brie has melted beautifully.
- Top and garnish: Remove from the oven once again and spoon dried cranberries and toasted pecans on top of each sweet potato round. Garnish with fresh rosemary or thyme if desired. Serve warm for best flavor and texture.
Notes
- For extra flavor, consider adding a drizzle of honey or balsamic glaze before serving.
- To toast pecans, spread them on a baking sheet and bake at 350°F (175°C) for 5-7 minutes, stirring occasionally, until fragrant.
- These rounds can be prepared ahead of time and reheated in the oven before serving.
- Use fresh herbs like rosemary or thyme to add an aromatic touch that complements the sweetness of the potatoes and cranberries.
